Strawberry Scones

Out of This World Strawberry Scones

These Strawberry scones are absolutely amazing and are a nice treat at anytime of the day!

To make any where from 6-8 large scones or 12 mini-scones you will need:
1 cup of strawberries (you can use any other fruit you like or even chocolate chips)
4 tablespoons of sugar (3 for scones 1 for topping)
2 cups of all purpose flour 
2 teaspoons of baking powder
1/4 teaspoon of salt
6 tablespoons of slightly softened butter cut into cubes
2/3 cup of cream (you could use half and half or buttermilk if you prefer)

Preheat the oven to 400 degrees and lightly grease a baking sheet.  Cut strawberries into pretty small pieces (if you don't cut them into small enough pieces they will not stay in the dough).  Sprinkle the strawberries with a half a tablespoon of sugar and let it sit.  In a seperate bowl combine 2 and a half tablespoons of sugar with the flour, baking powder, and salt in a large bowl.  Add butter and combine the dough using your hands (or if you prefer a neater way you can use a pastry cutter, however the result is not nearly as combined and it takes a lot longer). Stir in the strawberries GENTLY and add the cream.  Use spatula to gently combine the dough.  Flour your hands and scoop dough onto a floured counter top.  Knead it until the dry ingredients are all incorporated.  Make sure that it is not over-kneaded.  If at anytime the dough becomes overly sticky add more flour.  It it is too dry add more cream (or buttermilk or half and half).  Pat your dough out into a circle using your hands until it is about 1/2- 3/4 an inch thick.  Spray your knife with cooking spray and cut dough into 6-8 wedges.  Another way that you could cut your dough with a pizza cutter.  Transfer to baking sheet making sure to leave half an inch of space between each scone.  Bake for 15 minutes and sprinkle with sugar.  Then let it bake for another 5-10 minutes or until the tops are firm and golden.
